Veggie Enchiladas in Green Sauce (TUESDAY)



Savory vegetarian enchiladas are topped with green sauce and cheese and served with black beans and brown rice.

Corn tortillas are stuffed with a mixture of beans, mushrooms, spinach and other vegetables, then topped with green enchilada sauce and Jack cheese. These enchiladas are served with cumin-spiced black beans and lime-and-cilantro brown rice.
