Southwestern Black Bean & Corn Salad with Cilantro Lime Dressing (TUESDAY)



Black beans, corn and poblano peppers combine for a tasty and satisfying salad topped with queso fresco and a smoky citrus dressing.

Classic southwestern flavors in a colorful bean salad. Quinoa, black beans and corn are flavored with chilies, red onion and spices, and then served with a smoky cumin-lime dressing and a sprinkling of queso fresco.

This meal contains no gluten.

Beans are a fiber-packed source of vegetable protein, complex carbohydrates, magnesium and antioxidants.

Quinoa is a protein-rich, high-fiber grain containing iron, lysine, riboflavin, magnesium and manganese.

Corn is a fiber-rich food, and a good source of vitamins B3 and B6, manganese, and the antioxidant, pantothenic acid.
